Ingredients :-

  1. 300g collar meat (you can pick belly or even chicken chop, at your liking).
  2. Marinade sauce – soy sauce 2tbsp, oyster 2tbsp, sugar 1 1/2 tbsp, dark soy sauce 1tbsp, pepper to mix well and set aside for 30-minutes prior in fridge or best overnight.
  3. Sugar 1tbsp and 20ml water, mix well to set aside.
  4. Topping sauce – soy sauce 2tbsp, honey 2tbsp and butter.
  5. Bak choy 150g, wash and soak (I usually sprinkle tiny tbsp of baking soda or salt).
  6. Egg 3nos.

Cooking Steps :-

Marinade meat (ingredient #1 and #2) for 30-minutes or best overnight.

Set marinade meat in room temperature, an hour or least 30-minutes before air-frying them.

Place collar meat in air fryer even, set to 200°C (appr. 392°F) for 10minutes and another 8minutes to flip and cook.

Apply sugar coating (ingredient #3) on collar’s surface evenly (both sides), to increase caramel aroma and chewing texture.

Same time, prepare a boiling pot to blanch bak choy.

Boil in 5-minutes, off stove to soak cooked bak choy in ice water before serving on table.

Hot stove, crack and fried eggs. I have cooked sunny-side and over-hard eggs to pair with char siew rice (yum!).

Same frying pan, to cook topping sauce (ingredient #4) for 3-minutes to serve.

Served (I’m already drooling while fryer “helping” me to cook char siew). Let’s eat with me!

Tips :-

I usually soak blanch vegetables in ice water, to preserve crunchiness and freshness before serving.

Apply more thickening sugar coating, if you would like your char siew to be more sugar-ry.

Separating topping sauce for not directly mixing with char siew, I would always cook more sauce to pair with char siew and rice while my partner is preferring the opposite way.

I wish you loving this popular dish in my family, Homemade Char Siew Air Fryer Style.

From dish preparation, cooking, serving Homemade Char Siew and stove cleaning, I have total spent approximately 30minutes. 15minutes on stove cooking, using this time to run other errands (haha!).
