Canned food would always be my superhero, when I am having these situation (hahaa!).

15-minutes of total cooking time to a hearty meal with just a can of luncheon meat, why not?

Ingredients :-

  1. A can of luncheon meat (any brand, any flavour at your liking).
  2. 3 no. of eggs
  3. Bak Choy (any types of vegetable that in your fridge, or you can choose to skip). Rinsed and set aside to blanch.
  4. Ice water (to blanch bok choy).
  5. Rice (any carbs, burger bun, pasta, wrap or porridge).

Cooking Steps :-

Sliced luncheon meat to smaller size, put into air fryer at 180°C (appr. 356°F) for 8minutes one side and flip to add another 6minutes to cook.

Hot stove, hot oil and crack an egg to frying pan. I like sunny side, always! Served!

Ready a pot of boiling water, add bak choy to blanch for 5-minutes.

Put bak choy to ice water bowl (Ingredients #4). Set aside to serve.

Ready a plate of rice, add luncheon meat, sunny egg and bak choy to plate, hearty quick meal is ready to eat. Enjoy our Luncheon Meat Rice with Fried Egg!

Tips :-

  1. For more simple version, you may replace bak choy with cucumber, tomato, carrot or corn fruit. Salad vegetables are simply the best to munch with rice and luncheon meat!
  2. You could use air fryer to cook your egg at 180°C (appr. 356°F) for 6minutes for sunny side and fired egg at same temperature, 10minutes.
  3. I am eating left over rice in fridge, from yesterday meal which reheat at microwave for 2-minutes.
  4. I loved egg with soy sauce, you should try this!
  5. LeeKumKee LKK less salt 25% soy sauce is my favourite cooking companion, also best soy sauce for kids (so far).
