If you like me, there’s a kid at home who is very much a picky eater refusing some types of vegetable. Juicing out idea on cooking vegetable/s that kids will like and eat, has become new task for me.

New menu (I tried, at least for daily) to attract my kid to fall in love with bean sprout where typically avoiding. Let’s cook with me, Sweet Sour Pea Sprout Fried Eggs!

  1. Pea sprouts (Tips : I have chopped into smaller size, easier for kids to munch before soak and rinse, added in 1tsp baking soda to soak for 30minutes to have better cleaning result).
  2. 3 Eggs
  3. Sweet Sour Sauce – Ketchup / tomato sauce, white vinegar, soy sauce (2tbsp each), oyster sauce, sugar (1tbsp each), sprinkle some pepper and water to mix well.
I have added in 80ml water to do sauces mixing.

Cooking Steps :-

Hot stove, hot frying pan and pour in pea sprouts. Stir fry pea sprout first, until 80% cooked.

Add in oil (I am using corn oil), I have set aside pea sprout in pan as just in case my kid insists not to eat this green at least I still have an egg for his dinner (haha! Yes, a very soft-hearted mother).

Cracked 3 eggs into frying pan.

Wait for them to almost cooked (approximately 5minutes), now is time to flip as eggs are set. Need not to worry them to stick on pan or spoiled shape of eggs.

Another 5minutes to cook, flip again before adding in sauce that we prepared earlier. Cut eggs into 3 portions.

Add in sauce into frying pan, this time you will heard a satisfy sizzling sound (I like this sound, how about you?).

Pour sauce to pan until last drop, trust me because this is delicious even for adult not to say your kids.

Let sauce cook for 3minutes to set into egg and bean sprouts, I do some pressing too.

Flip eggs again, to let both sides of eggs to absorb sauces.

5minutes later, serve to plate.

I pour until last drop of sauce, waste free (haha!). And little trick, placing the piece of pure egg in middle of 2 pieces bean sprout eggs. This to test if my kid willing to give in and munch the pea sprout egg piece, where coated well with sweet sour sauce. Yum!

Ta-daa, Sweet Sour Pea Sprouts Fried Eggs is now ready to serve. Please enjoy with your family!

Tip :

Recommend to pick this white vinegar, added aroma and flavour to sweet sour sauce. I have check ingredients, quite clean (as I am cooking for my kid and family). #LeeKumKee brand, water, rice and sugar are all they had.

Frying pan, I will put at sink and let it cool down a bit before cleaning. While I am using this time to wipe stove and surrounding.

In total to cook a simple, cincai and kids friendly dish – Sweet Sour Pea Sprouts Fried Eggs , from chopping vegetable, mixing sweet sour sauce to finished cooking, I have only spent 15minutes, plus another 5minutes to clean stove and frying pan. Easy and tasty!
