Sharing a must cook tradition dish that my family used to cook in Chinese New Year – Lap Mei Fan.
My first time cooking Lap Mei Fan, turns out my husband and kid both asking for more portion and yes, they approved by requesting repeat cooking in within a week.
Let’s cook with me – Lap Mei Fan, simple version.

Lap Mei Rice, “Lap Mei Fan”
Ingredients :-
- Lap cheong, cut to smaller or any size.
- Dried mushroom, washed, soak and diced to smaller size.
- Lap duck (Chinese style marinated meat), rinsed with hot water and cut to smaller size.
- 1 cup of rice, rinsed and soaked for 1-hour to have boil fast in later cooking.
- Cooking sauce – 1tsp oyster sauce, 2tsp soy sauce, half tsp sugar, half tsp dark soy sauce and 1tsp sesame oil.
- Cooking oil.

Cooking Steps :-
Hot stove, hot cooking pot, boiling water to cook sliced mushroom for 5-minutes. Put aside for later cooking.

Add soaked rice to cooking pot with 200ml water, pour cooking oil around cooking pot to adding crisp aroma later when Lap Mei Fan is ready to serve.

Turn to middle heat, for 10-minutes. Switch to low heat for 3-minutes, poke few tiny holes to help rice boil and cook faster.

Top with lap duck, lap cheong and cooked mushrooms to cooking pot of boiled rice, to cook on low heat for 5-minutes.

Add a round of cooking oil on boiled Lap Mei Fan, to add extra crips on rice texture.

Boil for last 2-minutes with low heat, served – Lap Mei Fan!

Stir and mix well, then add in cooking sauce.

Tips :-
- Ingredients could be modify accordingly like grilled sausages, diced chicken breast, carrot, celery, corn or bok choy.
- Sesame oil can be replaced by extra virgin olive oil or avocado oil, equal aroma and nutrients.
- Finished by adding sprinkle nuts or sesame seeds would give extra chewing texture that your kid sure enjoying over.
