As many already knew, my kid and I are mushroom fans. I am very excited to share with you another simple mushroom cooking recipe, vegan friendly and kids friendly yet lazy mom friendly too while family are still eating healthily.
All needed is four ingredients, very easy!

Stir Fry Mushroom Bak Choy
Ingredients :-
- 200g bak choy (spinach, cabbage, purple cabbage or chinese cabbage is good to swap too, click here to check on earlier recipe “Stir Fry Mushroom Spinach“).
- 200g mushroom (any type of mushroom on your liking).
- Soy sauce (2tsp, I am using 25% less salt LeeKumKee).
- Cooking oil (little will do, I am using avocado oil).
Cooking Step :-
Hot stove, hot pan and hot oil to add mushroom, cook to golden color. Approximate at 6-minutes.
Add bak choy, cook for 5-minutes.
Add 1 to 2tsp of soy sauce, to enhance mushroom and bak choy aroma.
Stir fry for 3-minutes, then we are to serve Stir Fry Mushroom Bak Choy. Enjoy!
Tips :-
- Try to put less than 10-minutes stir frying for bak choy on frying pan, to keep nutrient and freshness.
- To add “sweetness” to dish for kids, you may add in cherries tomato, sweet bell peppers or carrot to cook extra 3-minutes.
- Sprinkle baked walnut or cashew nut on top, is yummy to eat as dinner salad!
